Chocolate Digestive Cookies

This easy 3 ingredient Chocolate Digestive Cookies recipe is made using store-bought digestives and topped with melted milk chocolate chips! They taste incredible and are a perfect tea-time cookie.

Ever had a Cadbury Chocolate Digestive cookie? They're basically digestives topped with melted chocolate. It was one of my favorite things to eat with tea because you get the smooth milk chocolate paired with the notes of wheat flour and subtle sweetness from the digestive cookies. The only problem? I can't always find them! I am always able to find regular digestive cookies at my local Middle Eastern stores, so I thought to make my own Chocolate Digestive Cookies, and the verdict? PERFECT!

Ingredients You Will Need

Only 3 ingredients!

  • Digestive Cookies: I buy mine from a local Middle Eastern store, but you can find them at some supermarkets or you can purchase them online.
  • Milk Chocolate Chips: I love using Guittard's milk chocolate chips, but you can use whatever brand you like!
  • Coconut Oil: I use coconut oil to thin out the chocolate a little and create a smooth and silky finish.

How to Make Chocolate Digestive Cookies

  • Melt the chocolate: In a microwave safe bowl, add the chocolate chips and coconut oil and microwave in 30 second increments, making sure to stir in between.
  • Coat the cookies: spoon chocolate onto each cookie (don't add too much, otherwise it will spill over).
  • Rest the cookies: Place the chocolate digestive cookies on a a baking tray lined with parchment paper and let them cool set. Could take a couple hours, depending on how warm it is.

Substitutions You Can Make

There are only 3 ingredients, but they can be flexible.

  • Digestive Cookies: If you can't find digestive cookies anywhere, you can use graham crackers instead. Or any other cookie you really like.
  • Milk Chocolate: I personally think milk chocolate goes perfectly with the digestive cookies, but if you're not a fan, you can easily use dark or semi-sweet chocolate.
  • Coconut Oil: If you're not a fan of coconut oil or don't have any on hand, substitute with vegetable or canola oil, or any other neutral oil.

Variations You Can Try

If you really like this recipe but want to jazz it up, here are a few things you can try:

  • Nuts: Top the cookies with your favorite type of crushed nuts!
  • White Chocolate Drizzle: Add a drizzle of white chocolate for a little pazazz!
  • Flaky Sea Salt: Chocolate + sea salt is its own love language. Highly recommend.
  • Other: Do whatever your heart desires!

How to Store Chocolate Digestive Cookies

If you have any leftovers, store them in an airtight container or ziploc bag and they should keep for quite some time, basically as long as the cookie will stay crisp.

  • Store any leftovers in an airtight container or ziploc bag.
