These No-Bake Peanut Butter Bars are rich and filled with peanut butter and oatmeal, sweetened with honey, and topped with silky, smooth melted chocolate!
Line a 8x8 square pan with parchment paper and set aside.
In a microwave safe bowl, heat the creamy peanut butter for 20-30 seconds.
In a medium sized bowl, add the melted peanut butter, honey (or maple syrup) and oatmeal and mix until combined. Add the chocolate chips and mix until incorporated.
Pour mixture into the prepared pan and press down until completely flat. Then set aside.
For the Topping
In a microwave safe bowl, add the chocolate chips and coconut oil and microwave in 30 second increments until melted, making sure to stir between increments.
Pour melted chocolate on top of peanut butter/oatmeal base and smooth out.
Refrigerate for 1 - 1.5 hours until the chocolate is set.
Once chocolate is set, remove from refrigerator. You may need to let it sit out for 10 minutes before slicing, otherwise the chocolate may crack.
