I am always in the mood for chocolate. Like, always! And lately I've been drawn to all the bad things: kinder bueno bars, twix, snickers, you name it! And they're so so good, but they're also so so bad! Today I decided it was time I made something a little healthier, but something delicious! And here we are: Healthy No-Bake Peanut Butter Bars!

These Peanut Butter Bars are loaded with peanut butter, honey, oatmeal, and mini chocolate chips, and then topped with melted chocolate. If you're looking for a delicious snack that won't make you feeling guilty, look no further!

How to Make Peanut Butter Bars

Step 1: In a microwave safe bowl, heat the creamy peanut butter for 20-30 seconds.

Step 2: In a medium sized bowl, add the melted peanut butter, honey (or maple syrup) and oatmeal and mix until combined. Add the chocolate chips and mix until incorporated.

Step 3: Pour mixture into the prepared pan and press down until completely flat. Then set aside.

How to Make Chocolate Topping for Peanut Butter Bars

Step 1: In a microwave safe bowl, add the chocolate chips and coconut oil and microwave in 30 second increments until melted, making sure to stir between increments.

Step 2: Pour melted chocolate on top of peanut butter/oatmeal base and smooth out.

Step 3: Refrigerate for 1 - 1.5 hours until the chocolate is set.

Step 4: Once chocolate is set, remove from refrigerator. You may need to let it sit out for 10 minutes before slicing, otherwise the chocolate may crack.

  • 1 8x8 square pan

Ingredients
 

For the base

  • 1 cup (250g) creamy peanut butter
  • cup honey or maple syrup
  • cup quick oats
  • cup mini chocolate chips

For the topping

  • 1 cup chocolate chips
  • ½ tablespoon coconut oil

Instructions
 

For the base

  • Line a 8x8 square pan with parchment paper and set aside.
  • In a microwave safe bowl, heat the creamy peanut butter for 20-30 seconds.
  • In a medium sized bowl, add the melted peanut butter, honey (or maple syrup) and oatmeal and mix until combined. Add the chocolate chips and mix until incorporated.
  • Pour mixture into the prepared pan and press down until completely flat. Then set aside.

For the Topping

  • In a microwave safe bowl, add the chocolate chips and coconut oil and microwave in 30 second increments until melted, making sure to stir between increments.
  • Pour melted chocolate on top of peanut butter/oatmeal base and smooth out.
  • Refrigerate for 1 - 1.5 hours until the chocolate is set.
  • Once chocolate is set, remove from refrigerator. You may need to let it sit out for 10 minutes before slicing, otherwise the chocolate may crack.
  • Once sliced, enjoy. Keep leftovers refrigerated.

    If you like chocolate and peanut butter, this is a winner! So easy to make. I ran out of peanut butter, so I used a mixture of peanut butter and creamy almond butter. The taste was still fantastic!

    I made these for a quick snack, and they are delicious! I was surprised my kiddoes are them too (my kids do not care for oatmeal)! Definitely a great snack when you're looking for a sweet healthy snack!

  4. Very very good and sooo easy to make !!! I've been on a diet for almost 2 months now and needed to satisfy my sweet craving and this was perfect and I don't feel too guilty about it yay !! Although it is very hard not to eat the entire dish of it lol I think the only thing I might do next time is add a splash of vanilla? Either way it is a great recipe, Thank you!!!
